The palate is vivid, perfumed, and beautifully chiselled, opening with wild strawberry, red cherry, and raspberryshaped by the 15‑day semi‑carbonic maceration. A mid‑palate of violet, rose petal, and crushed pink‑granite minerality reflects the shallow, decomposed granite of En Papolet, giving the wine its lifted aromatics and tensile frame. The texture is silky yet energetic, with fine, lightly grippy tannins from the whole‑cluster fermentation. The finish is long, savory‑mineral, and quietly floral, tapering with red‑berry skin, spice, and a clean granite echo.
