Delamere Vintage Sparkling Cuvée

The palate is precise, elegant, and beautifully mature, opening with lemon curd, white peach, and crisp green apple before unfolding into a deeper layer of brioche, almond pastry, and subtle toasted hazelnut from extended lees ageing. A mineral thread—chalk, wet stone, a hint of sea spray—runs through the structure. The finish is long, savoury‑citrus, and delicately autolytic, leaving impressions of citrus pith, pastry cream, and fine Tasmanian minerality.
