A product of a cool dry year, this Rosé is made from 777 Pinot Noir clone. The fruit was destemmed and soaked on skins in the cool room overnight. Pressed and then settled off bulk pulp and fermented in 5+ year-old barriques. Allowed to complete malolactic fermentation and lees stirred in barrel for ten months.
This luxurious Rosé is light salmon in colour, with a nose of strawberries, cream and savory undertones of kombu and dashi. Stone fruit, macadamia and cultured butter on the palate with fine peach skin tannin and a lovely fine minerality.
Drinking well now, can be cellared for 5 years.
