Limited to just 200 bottles, this release showcases Head Distiller Sarah Wallace’s inventive touch at Animus. Drawing from her greenhouse near Kyneton, she continues the Test Pressing series with a bold, native-driven gin crafted specifically for the perfect Martini.
Packed with 24 botanicals, it layers bright citrus notes like ruby grapefruit and lemon myrtle with roasted wattle seed and macadamia for depth, while native herbs and spices add aromatic lift and warmth. The result is complex yet precise.
On the nose, expect pure citrus oil with subtle juniper and soft florals. The palate is rich and textured—spicy, slightly sweet, and beautifully balanced—finishing bone-dry with a clean saline edge. In a Martini, it truly shines: robust, expressive, and unmistakably Australian.
