The Test Pressing Dry Gin is a homage to both the Martini and to Animus’ home-grown native botanicals. Here, the distiller weaves local botanicals, including ruby grapefruit zest, roasted wattle seed, macadamia, anise myrtle and native oregano alongside the more classic Gin botanicals. Lastly, Animus’ much-loved Barrel Aged Gin is a variation on the citrus-based Macedon Dry Gin aged in Moscato Giallo barriques from the nearby Musk Lane Winery. There are layers of apricot, marmalade, cocoa butter and coconut giving way to notes of pear, pineapple and burned sugar, followed by heat and spice.
