Established in 1995, Toolangi Vineyards is in the Yarra Valley adjoining the Toolangi State Forest. This single site vineyard on fine clay loam soil and produces grapes wines with distinctive personalities, each wine showing a strong sense of place. This Chardonnay is made from low cropped, hand harvested. Colour is medium yellow/straw. Complex aromas of peach kernel, bees wax and almond praline. Fresh vibrant evolution on the palate leading to soft, supple flavours on the middle palate of white peach, quince, and fresh baked lemon tart with a light dusting of freshly ground vanilla pod. The acid structure has a fine, long, line & length of zesty grapefruit pith with a subtle flinty finish. Fruit is crushed and pressed with solids to French oak barriques (20% new) for primary fermentation. Wine is sulphured on lees without malolactic conversion. 10 months on lees in oak. Vegan wine.
