Sister’s Run Old Testament Coonawarra Cabernet

Colour: Dark black-purple and bright. Alive. Nose: Cabernet’s deep and hidden depths, with traces of bright blackberry essence, cinnamon, cooked beetroot, and violets. The aromatics unfold slowly and meld with an underplayed oak bouquet. Herbs and fecund fields and berries hanging to the cane. Entry: A fresh line of lasting acidity provides tension and balance to the typically demonstrative Cabernet tannins and the weight of the just-ripe berry fruit flavours and textures. Middle Palate: The composition makes this red wine a delight now, but certainly augurs well for some bottle age. Acidity and tannins fight it out at the palate’s end before ripe yet taut fruit carries the day.. Serve with: Decant before drinking with a good Cote du Bouef or barbecued Scotch Fillet. Too many potato chips and a small green salad. Mature people might like English mustard. In Summary: All cabernet sauvignon - when made well from well-grown grapes from well-regarded regions - wants a counterpoint to its tannins.
