100% gin gin chardonnay from Willyaburp, Margaret River. Gravelly loam soils and 30 year old vine. Hand picked, chilled, hand sorted, whole bunch pressed to barrel and naturally fermented in 5 barrels of French oak. the natural fermentation took over 12 months to complete and was in a constant state of flux. Full malolactic fermentation with regular lees stirring. Bottled with no fining and a light filtration. Vegan friendly.
